Spanish Omelette

Ingredients
- 3 tbsp oil
- 2 large potatoes, diced
- 2 onions, chopped
- 6 eggs
- Salt and black pepper to taste
- 1 tbsp chopped parsley
Method
- Heat oil, add potatoes and onions and stir till coated with oil, let cook gently for 10 minutes till brown. Drain excess oil.
- Beat eggs in a bowl and add in salt and pepper.
- Pour eggs in the pan and mix with the vegetables, let them cook till set.
- Slide omelette on a serving platter and cut in quarters and sprinkle chopped parsley
