Urap (Javanese Mixed Vegetable Salad with Spiced Grated Coconut)

Urap or Gudangan is Javanese Mixed Vegetables with Spiced grated
coconut. it contains various kinds of stewed vegetables mixed with
spiced-grated coconut. The fresh aroma and the crunchiness of the stewed
vegetables meets a little spicy and creamy taste of the exotic coconut gives a
unique eating sensation. Light yet aromatic.
For nice colors
and presentation, use vegetables of all textures and colors. Leafy vegetables
for greens, cucumbers and beansprouts for whites, carrots for orange. The other
common condiments served are hard boiled eggs and tapioca-based white and red
crackers.
Ingredients
- 1 Corn-boiled, 3 Kaffir lime leaves
- 1 Carrot-shredded & steamed
- 4 sheets Cabbage, 1 Bay leaf
- 6 String beans-cuted & steamed
- 1 bundle Water Spinach/Spinach
- 2 stalks Lemon basil leaves
- 60 gr grated Coconut
Grinded spices:
- 1 clove Garlic, 2 cm Lesser Galangal
- 2 Shallots, 1 Curly chili, 2½ tsp Salt
- 3 tsp Sugar, 1 red Chili
Directions
Cut the kernels off the corn, set aside. Cut & then boiled water spinach/spinach & cabbage, set aside. Mix grinded spices with grated coconut. Put in kaffir lime leaves & bay leaf. Steam until cooked. Add in lemon basil leaves. Mix the grated coconut with steamed & boiled vegetables.ready to serve
